Today I am posting a veg.side dish recipe made with Drumstick Flowers. It is a traditional recipe of Drumstick Flowers from Bengal. It is a simple dish, healthy, tasty and very quick and easy to prepare and with few ingredients.
Cooking time – 30 minutes. Serve – 4
Ingredients –
1.Drumstick flowers – 100 grams.
2.Potato (large) – 1 (peeled and cut into small cubes)
3.Mustard seeds – 2 tbsp.
4.Shredded coconut – 2 tbsp.
5.Nigella seeds (kalonji) – 1/2 tsp.
6.Turmeric powder – 1/2 tsp.
7.Green chilly – 2
8.Slit green chilly – 2
9.Salt to taste.
10.Sugar – 1/2 tsp.
11.Oil – 4 tbsp.
Method –
1.Clean and wash the flowers, soak in water for 10 minutes. Drain and keep aside. Using little water grind mustard seeds and 2 green chilly to a paste.
2.Heat oil in a frying pan, add kalonji and stir fry for 30 seconds. Add the potato cubes,salt and turmeric powder, Fry for 3 to 4 minutes. Add the flowers, fry for 2 minutes. Add mustard seeds paste,saute for 1 minute. Add 2 cups of water,coconut,sugar and slit green chilly. Mix well.Cook on medium heat till all the water evaporates (stir occasionally).
Remove pan from heat,cover and give 10 minutes standing time. Delicious Drumstick Flowers Curry is ready,serve as a side dish for lunch with steamed Rice.
