Today I am sharing with you a delicious side dish recipe made with Ridge gourd and Moong dal. It is a veg. dish, tasty, healthy and very easy to prepare. It is a very nice dish with few ingredients that are readily available. The dish can be served with rice/roti/paratha.
Cooking time – 40 minutes. Serve – 4
Ingredients –
- Ridge gourd – 500 grams (peeled and chopped)
- Potato (large) – 1 (cubed)
- Moong dal – 100 grams.
- Dry red chilly – 1 (broken)
- Bay leaf – 1
- Cumin seeds – 1/2 tsp.
- Ginger paste – 1/2 tsp.
- Turmeric powder – 1/2 tsp.
- Cumin powder – 1/2 tsp.
- Slit green chilly – 4
- Salt to taste
- Sugar – 1/2 tsp.
- Oil – 4 tbsp.
- Ghee – 1 tsp.
Dry roast the Moong dal till light brown (in slow flame). Boil the dal with 1/2 tsp of salt until the dal is half cooked and there is no liquid left. Keep aside.
Heat oil, add dry chilly and cumin seeds, fry till light brown. Add bay leaf and cubed potato. Fry for 1 minute. Add the chopped Ridge gourd, salt. Cover the pan,cook for 3 to 4 minutes. Add ginger, turmeric and cumin powders. Saute for 2 to 3 minutes Add boiled Moong dal, green chilly and sugar. Saute for 2 minutes. Add 2 cups of water. Cover the pan and cook until there is no liquid left (stir in between).
Remove pan from the heat, mix ghee. Cover the pan, give few minutes standing time.
Delicious Bengali dish—-Jhinge-Moong is ready, serve as a tasty side dish with Rice/Roti/Paratha.
