Today I am sharing a very delicious side dish recipe made with unripe jackfruit (enchor). It is very famous in Bengali cuisine. It is a gravy based dish, very tasty and easy to prepare.
Cooking time – 40 minutes. Serve – 4
Ingredients –
1.Jackfruit – 500 grams.
2.Potato – 200 grams (peeled and cubed)
3.Cumin seeds – 1/2 tsp.
4.Tomato – 1 (finely chopped)
5.Ginger paste – 1/2 tsp.
6.Turmeric powder – 1/2 tsp.
7.Chilly powder – 1/2 tsp.
8.Cumin powder – 1/2 tsp.
9.Bay leaves – 2
10.Sugar – 1/4 tsp.
11.Salt to taste
12.Garam masala powder – 1/2 tsp.
13.Ghee – 1 tsp.
14.Oil – 1/2 cup.
Method – [Grease your palms and knife with oil before cutting the jackfruit]
1.Take the jackfruit,peel the thick skin cleanly. Divide it into 2 portions – solid and fibrous. Take solid portion and cut into cubes, keep aside. Take the fibrous portion and remove the outer hard skin of each seed and discard the fibers. In a bowl add I lit.of water and 1 tbsp.of salt. Immerse the solid cubes and seeds of the jackfruit for 10 minutes. Drain the water, keep aside.
2.In a separate bowl immerse the potato cubes for 10 minutes,drain and keep aside.
3.In a pan boil the jackfruit and potato for 5 minutes, drain and keep aside. In a small bowl add ginger,turmeric,chilly, cumin powder and 1/2 cup of water, mix well. Keep the masala mix aside.
4.Heat 4 tbsp.of oil in a frying pan, stir fry the jackfruit and potato for 4 minutes on slow flame. Transfer the fried vegetables to a bowl. Heat extra 3 tbsp.of oil in the same pan, when hot reduce the heat. Add cumin seeds. When cumin looks brown add bay leaves,fry for few seconds. Add tomato, saute for 2 minutes on slow flame. Add the masala mix and sugar,saute until the raw smell of the masala goes off. Add the fried jackfruit and potato and 1 cup of water, Saute for 5 minutes on slow flame. Add 3 cups of water and salt, let it bring to boil.Cook till the vegetables are soft. Add water it needed.
When the gravy starts thickening remove pan from heat. Add ghee and garam masala powder,mix well. Cover the pan, give 10 minutes standing time. Raw Jackfruit curry is ready to serve. Garnish with Raisins and serve with Rice / Roti / Paratha.
