Today I am posting a delicious non-veg dish—–Shrimps In Pumpkin Leaves recipe. It is a classic Bengali delicacy and very popular among Bengali. The process of making this beautiful dish is very easy.It is one of the best recipe of shrimps(chingri mach). It can goes well with plain rice.
Cooking time – 30 minutes. Serve – 4
Ingredients –
- Shrimps – 500 grams.
- Pumpkin leaves – 10/12 nos.
- Grated coconut – 1 cup.
- Mustard seeds – 50 grams.
- Turmeric powder – 1/2 tsp.
- Salt to taste.
- Sugar – 1/4 tsp.
- Green chilly – 4.
- Slit green chilly – 8.
- Mustard oil – 6 tbsp.
Instructions –
Clean and wash the fish well, marinate with 1 tbsp. of salt. Keep aside for 10 minutes. Shrimps will release little water.After 10 minutes transfer them to a colander to drain water. By adding 1/2 cup of water grind mustard seeds,grated coconut and 4 green chilly into a smooth paste. Transfer the paste to a large mixing bowl. To this add salt,sugar,turmeric powder and 4 tbsp.of mustard oil. Mix all the ingredients. Now add the shrimps and slit green chilly. Again mix very well. Cover the shrimp mix and allow to rest for 10 minutes. Wash the pumpkin leaves with warm water,keep aside
Take a leaf,put one spoonful of shrimp mix (with one slit green chilly) in the middle of the leaf and wrap from the sides of the leaf to make a packet. Tie the packet with thread. In this way make 8 to 10 packets.
Heat a griddle, spread 2 tbsp.of oil. Reduce the heat. Place 4 to 5 packets on the griddle. Cover the pan. Cook on low flame for 6 to 8 minutes on both sides. Take out the fried shrimps stuffed packets from the griddle. Again place the griddle on heat,start the next batch.
