Today I am sharing with you a veg. side dish recipe made with Ridge Gourd. It is a beautiful dish, non spicy—–so nutritious and tastes awesome. It is very quick and easy to prepare. If you had all the ingredients prepared , it could be ready in 20 minutes max. The gravy had a perfect thickness——not too soupy and not to thick. It can be served as a side dish with Rice/Roti/Paratha.
Cooking time – 20 minutes. Serve – 4
Ingredients –
- Ridge gourd – 1 kg.
- Cumin seeds – 1/2 tsp.
- Mustard seeds – 1/2 tsp.
- Salt to taste.
- Sugar – 1/2 tsp.
- Milk – 1 cup.
- Flour (maida) – 1 tbsp.
- Slit green chilly – 4
- Oil – 2 tbsp.
- Ghee – 1 tsp.(optional)
Instructions –
Peel the skins of Ridge gourds and cut into small peaces. Wash and keep in a colander. Heat oil in a frying pan, add cumin seeds. Fry till light brown. Add mustard seeds, when crackling add the chopped gourd and salt. Stir and cover the pan. Cook on slow heat for 7 to 8 minutes (stir in between). Remove the lid , add sugar and slit green chilly. Cook for 4 to 5 minutes. the gourd pieces will release water, so no need to add water. Dissolve flour in milk and add to the pan, mix well. Cook for 3 to 4 minutes. When the gravy starts thickening, remove pan from the heat. Mix ghee, cover and give few minutes standing time.
Delicious Veg. Ridge Gourd Gravy is ready, serve with Rice/Roti/Paratha. Enjoy.
