My today’s recipe is rice pakora – a typical Bengali snack made of boiled rice. It is very tasty and easy to prepare. You can use leftover rice also.
Cooking time – 20 mins. Serve – 4
Ingredients –
1.Boiled rice – 2 cups.
2.Egg – 1 (beaten)
3.Onion – 1 (grated)
4.Ginger paste – 1/2 tsp.
5.Garlic paste – 1/2 tsp.
6.Turmeric pwd – 1/4 tsp.
7.Green chilly – 2 (chopped)
8.Coriander leaves – 2 tbsp.(chopped)
9.Flour – 2 tbsp.
10.Corn flour – 2 tbsp.
11.Sugar – 1/4 tsp.
12.Salt to taste.
13.Pepper pwd – 1 tbsp
14.Oil for deep frying.
Method –
1.In a mixing bowl take the boiled rice and mash lightly.
2.Add ginger-garlic paste,turmeric pwd,green chilly,coriander leaves,onion,sugar and salt to the mashed rice and mix well.Add beaten egg and mix it properly.
3.Add flour and corn flour and knead the mixture to a soft dough.
4.Divide the dough into balls (orange size) and flatten.
5.Heat oil in a frying pan, reduce the flame, fry the rice balls on medium flame until brown on both sides.Fry 3-4 balls at a time.
6.Take out the fried balls with a slotted spoon and drain excess oil in paper towels.
Rice pakora is ready to serve, sprinkle pepper pwd and serve hot with tomato sauce or ketchup.
