Today we are making a popular Indian breakfast dish – Aloo Paratha. This is not the usual stuffed paratha. Aloo Paratha is basically paratha stuffed with potato mixture. Today I am making Aloo Paratha with a little twist. It is also very tasty and quick and easy to prepare.
Cooking time – 40 minutes. Serve – 4
Ingredients –
1.Potato (large) – 2
2.Flour – 11/2 cups.
3.Onion – 1 (finely chopped)
4.Ginger paste – 1/2 tsp.
5.Garlic paste – 1/2 tsp.
6.Salt to taste.
7.Sugar – 1/4 tsp.
8.Green chilly – 2 (finely chopped)
9.Chopped coriander leaves – 2 tbsp.
10.Lime juice – 2 tbsp.
11.Oil / Ghee – 2 tbsp.(for the dough)
12.Oil for shallow frying.
Method –
1.Boil the potatoes and peel them well. Mash or grate the potatoes. Mix salt,sugar,onion,ginger,garlic,chilly,coriander,oil/ghee and lime juice with the mashed potato.
2.In a large bowl put flour and mix the potato mixture with the flour, knead to make a dough.
3.Divide the dough into 7-8 equal equal portions and give each portion a round shape of ball. Take one ball and roll it into a size of a normal roti (using dry flour).
4.Put the rolled raw paratha on a hot griddle,reduce the heat. When bubble start,flip the paratha.Spread 2 tbsp of oil around the circular edge and shallow fry. Follow the same progess for the remaining dough balls.
Aloo Paratha is ready to serve.garnish with lemon slice,green chilly and serve with curd/pickle/sauce
