Today I am sharing with you a delicious cake recipe made with Coconut. It is a quick and easy to make recipe which takes 3 to 5 minutes in microwave (the power of individual oven is different). It is a simple cake but very tasty to eat

Cooking time – 3 to 5 minutes.  Serve – 4
Ingredients –
1.Flour – 1 cup.
2.Desiccated coconut – 11/2 cups.
3.Sugar – 3/4 cup.
4.Baking powder – 1 tsp.
5.Baking soda – 1/4 tsp.
6.Milk – 1 cup.
7.Veg. oil – 1/2 cup.
8.Vanilla – 1 tsp.
9.Lime juice – 2 tbsp.
10.Chopped nuts – 1/2 cup.
Method –
1.Grease a microwave safe bowl with oil or butter. Dust it with flour, keep aside. Sieve flour,baking powder and baking soda. Keep aside.
2.Take a large bowl, add milk,oil, sugar and vanilla. Stir until sugar is dissolved. Add desiccated coconut,chopped nuts and mix well. To this add flour mix, fold into the mixture. At last add lime juice,mix gently. Pour the batter into the greased bowl. Tape the bowl slightly and quickly place in microwave at high power for 3 minutes.
The delicious Coconut Cake is ready. Insert a tooth pick, if it is comes out clear, the cake is ready. If the cake is not cooked,allow it to cook for another 1 to 11/2 minutes. Take out the cake from the microwave, give 10 minutes standing time. Run a knife all around the bowl and invert in a plate.
Coconut cake is ready,garnish with desiccated coconut and serve.
