Today I am sharing with you a non veg. curry recipe made with Pumpkin, Ash Gourd and Hilsha Fish Head. It is a typical Bengali curry and very popular throughout Bengal. The dish is very tasty and quick and easy to prepare.
Cooking time – 45 minutes. Serve – 4
Ingredients –
1.Ash Gourd – 500 grams.
2.Pumpkin – 500 grams.
3.Hilsha Fish head – 1 (cut into halves)
4.Dry red chilly – 2
5.Cumin seeds – 1 tsp.
6.Turmeric powder – 1/2 tsp.
7.Bay leaves – 2
8.Salt to taste.
9.Sugar – 1/2 tsp.
10.Oil – 4 to 6 tbsp.
11.Wheat flour – 1 tbsp.
12.Slit green chilly – 4
Method –
1.Take the Ash Gourd and peel the skin off. Wash and grate well (using a grater). Boil the grated gourd in 2 cups of water for 2 minutes and drain. Peel the Pumpkin,wash and cut into julienne. Wash the fish head and marinate with 1/4 tsp.of salt and a pinch of turmeric powder. Keep aside.
2.Heat oil in a frying pan and fry the fish head on both sides till brown, take out from the oil,break into pieces and keep aside. Add dry red chilly in the remaining oil, stir fry until brown. Add 2 tbsp.of oil if needed. Add cumin seeds. When the cumin looks brown add Ash gourd, Pumpkin, salt,turmeric powder and mix well. Saute for 5 to 6 minutes. Add the fried fish head,sugar,green chilly and 1 cup of water. Cook till all the water evaporates (stir occasionally). Sprinkle wheat flour,mix well and cook for 2 minutes with stirring continuously on slow heat. You can add 1 tsp.of ghee at this stage.
Remove pan from the heat,cover and give 10 minutes standing time. The delicious curry is ready, serve with steamed Rice.
