My today’s recipe is potato-cauliflower curry- a simple veg.cauliflower preparation. It is an authentic Bengali side dish ,very tasty and easy to prepare.
Cooking time – 30 minutes. Serve – 6
Ingredients-
1.Cauliflower – 1 (cut into florets)
2.Potato – 2 (peeled and cut into 11/2 inch cubes)
3.Tomato – 1 (chopped)
4.Cumin seeds – 1 tsp.
5.Bay leaves – 2 (optional)
6.Ginger paste –1 tbsp.
7.Turmeric pwd.- 1 tbsp.
8.Red chilly pwd- 1/2 tbsp.
9.Cumin pwd – 1 tbsp.
10.Sugar – 1tsp.
11.Salt to taste.
12.Ghee – 1tbsp.
13.Oil – 100 grams.
14.Garam masala powder – 1 tbsp.
Method-
1.Take warm water in a large bowl.Add 1 tbsp.of salt.Mix well. Immerse the cauliflower florets into the salty water. After 10 minutes put them in a colander.
2.Boil the potato cubes for 4-5 minutes. Drain and keep aside.
3.Keep the cauliflower florets in a bowl and marinate with 1 tsp.of salt and a pinch of turmeric pwd.
4.Group cauliflower into 3 batches. Heat oil in a frying pan,fry each batches till light brown.Remove them and keep aside. Clean out the frying pan.
5.Heat 4 tbsp. of oil in the frying pan, reduce heat. Add cumin seeds,when it splutters add bay leaves.Stir and add the potato cubes. Fry the potato for 4-5 mins.
6.Add tomato pieces,saute for 3-4 mins. Then add ginger,chilly, turmeric,cumin powders, sugar with 1/4 cup of water.On medium flame,saute until the raw smells of the masalas goes off.
7.Add 2 cups of water and salt,stir and let it bring to boil.
8.Add fried cauliflower florets and mix gently,simmer for 7-8 minutes.
9.When the oil starts floating on the top of the gravy, remove pan from the heat.
10.Mix ghee and garam masala powders, cover the pan and give 10 minutes standing time.
Potato-cauliflower curry is ready to serve. Serve as a side dish with rice/roti/paratha….
