Today I am posting a delicious side dish recipe made with Malabar Spinach and fish head. It is a traditional Bengali recipe and tastes awesome. It is one of the best recipe of Malabar Spinach. It goes well with steamed rice.
Cooking time – 40 minutes. Serve – 6
Ingredients-
- Fish head – 1 (cut into pieces)
- Ginger paste – 1/2 tsp.
- Cumin powder – 1/2 tsp.
- Coriander powder – 1/2 tsp.
- Turmeric powder – 1 tsp.
- Malabar spinach – 500 grams.
- Chopped vegetables – 1 bowl.(potato, pumpkin,eggplant)
- Slit green chilly – 6.
- Salt to taste.
- Sugar – 1 tsp.
- Whole red chilly – 2
- Bay leaves -2
- Panch foron – 1 tsp.
- Oil – 6 tbsp.
- Wheat flour – 1 tbsp.
Instructions –
Cut the stems of the spinach into 1 inch pieces and slit in between. Chop the leaves. Wash all the vegetables and keep in a colander.Marinate the fish head with 1/2 tsp.of salt and a pinch of turmeric powder. Put ginger in a small bowl. To this add 1/2 tsp.of turmeric, cumin, coriander and 1/2 cup of water. Keep the masala mix aside.
Heat 4 tbsp.of oil in a frying pan, add the fish head and fry till light brown. Add the masala mix, saute for 4 to 5 minutes. Take out the cooked fish head from the pan, keep aside.
Add 2 tbsp.of oil in the pan.When the oil is hot add dry red chilly and fry till brown. Reduce the heat and add Panch foron and bay leaves. Fry until the spices give out their aromas. Add all the vegetables, sugar, turmeric powder and mix well. Cover the pan and cook for 5 to 6 minutes. Stir in between. Now add the cooked fish head, sugar, green chilly and 11/2 to 2 cups of water. Cover the pan and keep cooking till all the water evaporates. If needed add extra water and cook for few minutes. Dissolve wheat flour in 1/2 cup of water and add to the pan. Mix very well. Cook for 2 to 4 minutes with stirring continuously.
The curry is ready, remove pan from the heat, cover and give few minutes standing time. Serve the beautiful Malabar Spinach curry with steamed rice.
