My today’s recipe is Mangshor Jhol – a simple dish of mutton. It is a goat curry prepared in authentic Bengali style.
Cooking time – 1 hour. Serve – 5
Ingredients –
1.Mutton – 1 kg.(washed and cut into medium pieces)
2.Potato – 3 (peeled and each cut into halves)
3.Onion – 500gms.
4.Ginger paste – 1 tabspoon.
5.Garlic paste – 1 tabspoon.
6.Red chilli pwd – 1 tabspoon.
7.Cumin pwd – 1/2 tabspoon.
8.Turmeric pwd – 1 tabspoon.
9.Bay leaf – 4
10.Tomato – 1 (finely chopped)
11.Ghee – 1 tabspoon.
12.Garam masala pwd – 1 tabspoon.
13.Oil – 100gms.
14.Salt to taste.
15.A pinch of sugar.
Method –
1.Rub 1/2 teaspoon of salt and a pinch turmeric on the potato pieces.
2.Heat oil in a pan, fry potato pieces till light brown. Remove and keep aside.
3.In the same pan add onion and fry till light brown. Add ginger-garlic paste and bay leaves, saute for 1 mins. Add tomato pieces, chilli-cumin-turmeric pwds and sugar with 1/4 cup of water. Saute the masala mix for 4-5 mins.
4.Add the mutton pieces and salt. On slow flame saute with continuous stirring till oil separates.
5.Add 3 to 4 cups of warm water and potato pieces, let it bring to boil.
6.Cook till mutton is tender.Stirring occasionally. (if needed add warm water)
(You can use pressure cooker,then add 2 cups of water)
7.Remove pan from heat, add ghee and garam masala pwd.Mix well and cover the pan, give 10 mins standing time.
Mutton curry is ready to serve.Serve hot with steamed rice, rotis, parathas.
