Mixed Vegetable CURRY–A Healthy Dinner Recipe

My Today’s Recipe is Mixed Vegetable Curry–A Healthy Dinner Recipe.
It’s a Healthy dish,quick and easy to make.It has Lots of green veggies into it,So very good choice if you are in a healthy diet.
So, without a further ado lets see how to make Mixed Vegetable Curry–A Healthy Dinner Recipe.
Mixed Vegetable Curry–A Healthy Dinner Recipe
Preparation Time – 30 mins.
Serve   – 2
Ingredients –
1.Potato     – 1 (Cut into small pieces).
2.Cauliflower- 1/4 of a Cauliflower.(Cut into small florets).
3.Carrot     – 2 (Cut into small pieces).
4.French beans- 8 (Cut into 1 inch long).
5.Peas        – 1/2 cup (Shelled).
6.Capsicum    – 1 (Cut into large pieces).
7.Tomato      – 1 (Chopped).
8.Green chili- 2 (Slitted).
9.Ginger paste- 1/2 teaspoon.
10.Garlic paste- 1/2 teaspoon.
11.Peppercorn powder- 1 teaspoon.
12.Sugar         – 1/2 teaspoon.
13.Milk          – 1 cup.
14.Butter        – 1 tabspoon.
15.Cornflower    – 1 tabspoon.
16.Coriander leaves- 1 tabspoon.
Salt to taste.
Method –
1.Heat Butter in a pan,add Ginger-Garlic paste with 1/4 cup of water and stir fry till golden brown on slow flame.
2.Add all vegetables(except tomato,chilli)and salt,stir fry for about 2 mins.
3.Add Tomato,Peppercorn pwd,Sugar and 1/4 cup of Water and saute for 4-5 mins on medium heat.
4.Add 1/2 cup Water and cover the pan with lid,cook for 5-8 mins until the Vegetables are cooked,stir once in between(If needed add little water).
5.Dissolve Cornflower in 1/2 cup of Milk and mix with the Vegetables,cook for 2-3 mins on stirring constantly.
6.Remove from heat,Add green chilli,Coriander leaves and mix well.Cover the Curry for 5 mins.
Serve the Curry with Rice, Rotis,Parathas….
