Today I am posting a simple but very healthy side dish recipe made with Pumpkin leaves —–it is Mashed Pumpkin Leaves. It is a typical Bengali recipe, very quick and easy to prepare and tastes delicious. Pumpkin leaves are nutritious and rich in vitamins and minerals. It is a non-spicy dish also. so try to make a tasty and healthy side dish with Pumpkin leaves. Always use tender leaves for this recipe.
Cooking time – 25 minutes. Serve – 4
Ingredients –
- Pumpkin leaves -15/16 nos.
- Onion (small) – 1 (finely chopped). It is optional.
- Garlic cloves- 4(chopped)
- Green chilly – 2
- Slit green chilly – 4
- Nigella seeds/Kalojeera – 1/2 tsp.
- Salt to taste.
- Sugar – 1/4 tsp.
- Mustard oil – 3 tbsp.
Instructions –
Boil the leaves in hot water for 4 to 5 minutes. Transfer to a colander.By adding 1/2 cup of water grind the leaves and 2 green chilly into a smooth puree.
Heat 2 tbsp.of oil in a frying pan,add Kalojeera. Fry for 30 seconds. Add the chopped onion and garlic. Fry for 1 minute. Add the leaves puree, mix well. Stir for 4 to 5 minutes. Add salt,sugar and slit green chilly. Stir for 5 to 6 minutes. When the mixture becomes dry and starts to leaves the side of the pan, remove pan from the heat.Allow to cool. Then mix 1 tbsp.of mustard oil. Mashed Pumpkin Leaves is ready, Serve as a side dish with steamed rice.
