Today I am posting a typical Bengali dish- Kharkol Pata bata recipe. It is a simple dish,full of flavors and nutritious also. Kharkol leaves are packed with nutrients and hence its consumption is associate with several health benefits. So try this non spicy healthy dish–Mashed Kharkol Leaves.
Cooking time – 25 minutes. Serve – 4
Ingredients –
- Kharkol leaves – 2 bunches.
- Nigella seeds (kalojeera) – 1 1/2 tbsps.
- Garlic cloves – 6
- Green chilly – 2
- Slit green chilly – 4
- Salt to taste.
- Sugar – 1/4 tsp.
- Mustard oil – 3 tbsp.
Instructions –
Take only the fresh leaves, wash well and chop roughly. keep aside. Place a pan on low heat, add 1 tbsp.of nigella seeds. Dry roast the seeds very lightly(it will help to make kalojeera paste easily). Now grind the kalojeera to a powder. Add 1/4 cup of water and again grind to a paste. Cover and keep aside.
Grind garlic and 2 green chilly into a paste. Heat 2 tbsp.of oil in a frying pan, add 1/2 tbsp,of nigella seeds. Fry for 30 seconds.Add the chilly -garlic paste, saute for 1 minute. Grind the kharkol leaves with 1/2 cup of water in a food processor and add to the pan. Stir for 3 to 4 minutes. Add nigella seeds paste,salt sugar and slit green chilly. Mix well. Stir for 7 to 8 minutes. When the mixture becomes dry and start to leave the sides of the pan remove pan from the heat. Allow to cool . Now mix 1 tbsp.of raw mustard oil and cover the pan.
Delicious Bengali dish Kharkol Pata Bata is ready, serve with steamed rice.
