Today I am sharing with you a super healthy side dish recipe made with Ridge gourd peels. It is a tasty dish and very easy to prepare. It is a non-spicy dish and you need only 3 tbsp. of oil. Ridge gourds are packed with nutrition. Whenever you use Ridge gourd, do not waste its peels. Preserve the peels and make this healthy delicious dish. I always use entire peels to make various dishes, but you can remove the sharp ridges of the peels.
Cooking time – 30 minutes. Serve – 4
Ingredients –
- Ridge gourd peels – 1 bowl (chopped roughly)
- Whole red chilly – 1(broken)
- Nigella seeds (kalojeera) – 1/2 tsp.
- Onion – 1(chopped finely)
- Garlic cloves – 4 (chopped)
- Tomato – 1 (chopped)
- Green chilly – 2
- Slit green chilly – 4
- Salt to taste.
- Sugar – 1/2 tsp.
- Mustard oil – 3 tbsp.
Instructions –
By adding 4 cups of water pressure cook the peels up to 1 whistle. Transfer the boiled peels to a colander. By adding 1 cup of water grind the peels with 2 green chilly and tomato into a smooth puree.
Heat 2 tbsp.of oil in a frying pan,add whole red chilly. Fry till brown. Add kalojeera, fry for 30 seconds. Reduce the heat,add chopped onion and garlic. Fry for 2 minutes. Add the peels puree and cook for 3 to 4 minutes. Add salt,sugar and slit green chilly. Stir well and cook for 5 to 6 minutes.When the peels mixture becomes dry and start to leaves the sides of the pan,remove from heat. Give 5 minutes standing time. Then mix 1 tbsp.of oil.
Tasty and healthy Mashed Ridge Gourd Peels is ready, serve with steamed rice.
