Today I am sharing with you Mochar Chop recipe. It is a famous street food of Kolkata, tasty and very popular also. You can make it easily at home. It is a deep fried snacks, can be served as a appetizer or as a tea time snacks. It is a veg.recipe, but you can add chopped garlic also.
Cookig time – 45 minutes. Serve – 4
Ingredients –
- Banana flower – 1
- Dry red chilly – 1.
- Bay leaf – 1. And grated ginger – 1/2 tsp.
- Cumin seeds – 1/2 tsp.
- Turmeric powder – 1/4 tsp.
- Chilly powder – 1/4 tsp.
- Cumin powder – 1/4 tsp.
- Coriander powder – 1/4 tsp.
- Salt to taste.
- Sugar – 1/2 tsp.
- Roasted pea nuts – 3 tbsp.
- Roasted masala powder – 1 tsp.
- Potato (large) – 1 (boiled and mashed)
- Maida – 1 cup.
- Corn flour – 2 tbsp.
- Bread crumbs – 250 grams.
- Oil for deep frying.
Instructions – [ Roasted Masala – in a frying pan add whole red chilly(1), Cumin seeds (1/4tsp.), bay leaf (1), coriander seeds(1/2 tsp.),nigella seeds –(1/4tsp.),clove(2),cinnamon(1/2 inch),cardamom(2)and pepper corn(5). Dry roast in slow heat. When the spices look light brown and give out their aromas, remove pan from the heat and grind to a powder. Transfer the powder in a covered bowl.
Take out all the blossoms from the banana flower, discard the transparent casing and stigma from each blossom. Chop them finely. By adding 1 tsp.of salt soak them in water for 10 minutes and drain. Boil the chopped flower (Blossom) in water for 5 to 6 minutes. Transfer them to a colander. In a small bowl add turmeric, chilly ,cumin, coriander powders and 1/2 cup of water. Mix and keep aside.
Heat 2 tbsp.of oil in a frying, add dry red chilly and cumin seeds. When the cumin looks brown add bay leaf and grated ginger, stir for 10 seconds. Add the chopped flower and 1 tsp.of salt. fry for 2 minutes on medium heat. Add the masala mix,sugar and pea nuts, saute for 3 to 4 minutes. Add the mashed potato and mix very well, saute for 1 minutes. Remove pan from the heat. Add the roasted masala powder and 2 tbsp.of bread crumbs. Mix all the ingredients properly. Allow the mixture to cool.
In a bowl add flour and corn flour. Add water, beat well to make a thin batter. Spread bread crumbs in a flat dish. Divide the flower mixture into balls (round or oval).
Heat enough oil in a frying pan. When it is hot reduce the heat. Take one ball, dip into the flour batter,roll on bread crumbs and drop slowly in the hot oil. Fry on slow heat until golden brown on both sides. Fry 3 to 4 balls at a time. Increase the heat, take out the fried balls with a slotted spoon, keep on paper towels. Again reduce the heat and start the next batch.
