Today we are going to make Jaggery Cake. Jaggery is a healthy substitute for sugar. Jaggery has tremendous health benefits. So the Jaggery Cake is healthy and also very tasty. It is very simple to prepare in the microwave in 3 – 5 minutes (the power of individual oven is different).
Cooking time – 3 to 5 minutes. Serve – 4
Ingredients –
1.Flour – 1/2 cup.
2.Grated jaggery – 1/2 cup.
3.Egg – 1
4.Oil – 3 tbsp.
5.Baking powder – 1/2 tsp.
6.Milk – 3-4 tbsp.
7.Vanilla extract – 1/2 tbsp.
8.Lime juice – 1 tbsp.
Method –
1.Grease a microwave safe bowl with oil and dust it with flour. keep aside Shift flour and baking powder.
2.In a large bowl beat egg and jaggery. Add oil, milk and vanilla, mix well. Add flour and fold into the egg mixture. Add lime juice,mix well. You can add dry fruits or chocolate chips. Pour the batter into the greased bowl and microwave on high for 4 minutes. Insert a tooth pick, if it is comes out clear, the cake is ready. If the cake is not cooked allow it to cook for another 1 – 2 minutes. Give 5 minutes standing time. Let it cool completely.Run a knife all around the bowl and invert it on a plate.
Jaggery Cake is ready to serve.Garnish with grated jaggery/chocolate..
