Today I am posting a delicious snacks recipe made with pumpkin leaves and Lote mach (Bombay duck). It is a typical Bengali snacks recipe, budget friendly and tastes awesome. It can be served as evening snacks or as a first item for lunch. But always remember the fish should be fresh.
Cooking time – 40 minutes Serve – 4
Ingredients –
Bombay Duck – 400 grams
Cumin seeds – a pinch.
Onion – 200 grams
Ginger-garlic paste- 1 tsp.
Turmeric powder – 1/2 tsp.
Cumin powder – 1/2 tsp.
Coriander powder – 1/2 tsp.
Red chilly powder – 1/2 tsp.
Salt to taste.
Pumpkin leaves – 8 nos.
Oil for deep frying.
Rice flour/Corn flour – 1/2 cup.
Plain flour (maida) – 1/2 cup.
Instructions –
Take the fishes, cut the heads,tails and fins. Wash well with warm water. Slit the fish vertically and discard the main bone. Marinate with 1 tsp.of salt,allow to rest for 10 minutes. The fish will release water. discard all the water from fish and keep them in a colander.
Heat 2 tbsp.of oil in a frying pan, add cumin seeds, fry till light brown. Add onion,fry for 2 minutes on slow flame. Add ginger-garlic paste,masala powders(turmeric,chilly,cumin,coriander) and 1/2 cup of water. Saute for 2 minutes. Add the fish, salt. Saute on slow flame till all the water evaporates. Remove pan from the heat—–allow to cool.Stuffing is ready.
Wash the pumpkin leaves and pat dry. Now make a batter—–in a bowl take flour,rice flour/corn flour, salt, pinch of turmeric powder and mix well. Add water little by little and make a semi thick batter. Beat the batter very well.
Divide the cooked fish into 8 portions. Take one portion,put it in the middle of one leaf. Cover the fish with rest of the leaf to make a parcel. Repeat the process and make 8 nos.of fish stuffed parcels.
Heat oil, when it is hot reduce the heat. Take one parcel, dip into the batter and drop in the hot oil. Fry on slow flame till light brown on both sides. Increase the heat, take out from the oil, keep on paper towels.. Fry 2 to 3 fish parcels at a time. Delicious Bengali home made snacks is ready——-serve hot.
