Today I am posting a healthy curry recipe made with Pea Shoots and vegetables. It is a traditional Bengali recipe,very quick and easy to prepare and with few ingredients. It is a tasty dish, non spicy and nutritious. You can use whatever vegetables you have in hand, like Cabbage,Radish,Beans etc.
Cooking time – 35 minutes. Serve – 4
Ingredients –
1.Pea shoots – 500 grams.
2.Potato (medium) – 1 (peeled and cubed)
3.Eggplant (medium) – 1 (cubed)
4.Flat beans (seem) – 200 grams (cut into pieces)
5.Nigella seeds (kalonji) – 1/2 tsp.
6.Turmeric powder – 1/4 tsp.
7.Salt to taste
8.Sugar – 1/4 tsp.
9.Slit green chilly – 3.
10.Copped coriander leaves – 4 tbsp.
11.Bori (Sundried Urad dal dumplings) – 6 (optional)
12.Wheat flour – 1 tbsp. And oil – 2 tbsp.
Method –
1.Take young tendrils and leaves of the plant (soft top portion of the plant) and chop roughly. Wash and keep in a colander. Wash all the vegetables.
2.Heat oil in a frying pan,when hot reduce the heat.Fry the bori until brown on both sides. Take out from the pan and crush lightly,keep aside. Add kalonji in the remaining oil, fry for 30 seconds. Add all the vegetables,pea shoots, turmeric powder,salt and mix well. Cover the pan with lid and cook for 4 to 5 minutes (stir in between). Add 11/2 to 2 cups of water,sugar,green chilly. Cook over medium heat until the vegetables are cooked.
3.Dissolve wheat flour In 1/2 cup of water and add to the pan.Mix well. Keep cooking with stirring continuously till all the water evaporates. Add crushed Bori and coriander leaves, mix well and remove pan from the heat. Cover the pan,give 5 to 6 minutes standing time.
Tasty and healthy Pea shoots Curry is ready, serve with Rice/Roti/Paratha
