Today I am sharing wit you a famous Mutton recipe in Mughlai cuisine. It is Mutton Dumpukt. It is a great recipe but very simple to prepare. It cooks on a very slow flame in a sealed pot. It is delicious and filled with flavors.
Cooking time – 1 hour. Serve – 4.
Ingredients –
1.Mutton – 500 grams (cut into medium cubes.)
2.Onion – 200 grams.
3.Ginger paste – 1/2 tsp.
4.Garlic paste – 1/2 tsp.
5.Turmeric powder – 1/2 tsp.
6.Red chilly powder – 1 tsp.
7.Coriander powder – 12 tsp.
8.Salt to taste.
9.Sugar – a pinch.
10.Curd – 2 tbsp.
11.Raw papaya (grated) – 2 tbsp.
12.Bay leaves – 2
13.Ghee – 2 tbsp.
14.Oil – 6 tbsp.
15.Whole masala –[ Clove – 4,Cardamom – 4,Cinnamon – 1 inch.]
16.Nutmeg powder – 1/4 tsp. Flour dough for sealing.
Method –
1.Wash the meat and pat dry. Grind onion and papaya to a paste. In a large bowl mix card, ginger – garlic – onion-papaya, chilly-turmeric-coriander and 1 tbsp.of salt. Mix well to make a thick paste. Marinate the mutton with this paste, keep it rest for 1 hour.
2.Heat oil and ghee in a pan, add whole garam masala and bay leaves. Stir fry for 30 seconds. Add the marinated mutton,nutmeg powder,sugar and saute for 7 to 8 minutes with stirring continuously. Add 4 to 5 cups of water and salt, mix well. Cover the pan and seal with flour dough (around the edge of the lid). Reduce the heat. Cook on slow heat for 35 to 40 minutes.
3.Remove pan from the heat, give 10 minutes standing time. Remove the lid, check the tenderness and seasoning. Garnish with nuts.
Delicious Mutton Dumpukth is ready, serve with naan,roti or paratha.
