Today I am sharing with you a famous Chicken curry recipe – it is Chicken Korma. It is a great recipe, very simple to prepare.The dish is semi dry and wonderful aromatic.
Cooking time – 45 minutes. Serve – 4.
Ingredients –
1.Chicken – 500 grams (cut into medium pieces)
2.Onion – 200 grams (chopped)
3.Ginger paste – 1/2 tsp.
4.Garlic paste – 1 tsp.
5.Turmeric paste – 1/2 tsp.
6.Red chilly powder – 1/2 tsp.
7.Coriander powder – 1/2 tsp.
8.Curd – 50 grams.
9.Garam masala – Cardamom – 4,Clove – 4,Cinnamon – 1 inch
10.Pepper corn – 6
11.Almond – 6
12.Salt to taste.
13.Sugar – a pinch.
14.Ghee – 2 tbsp.
15.Oil – 4 tbsp.
16.Raisins – 25 grams
Method –
1.Wash the chicken and pat dry.Rub chicken with ginger-garlic paste,card and 1 tbsp.of salt.Keep it rest for 1 hour.
2.Heat oil and ghee in a frying pan, reduce the heat. Fry Almonds for 1 minutes. Take out the fried nuts from the oil, keep aside. Add onion in the remaining oil, fry until brown.Take out from the oil. Using 1/2 cup of water grind Almond raisins and onion into a paste, keep it aside.In a bowl mix turmeric, coriander,chilly powders and 1 cup of water. Keep the masala mix aside.
3.Place the frying pan on heat, add whole garam masala and pepper corn, stir fry for 30 seconds. Add the masala mix, saute till oil separates. Add the chicken,sugar and onion-almond paste, saute for 7 to 8 minutes on medium heat. Add 3 to 4 cups of water and salt, let it bring to boil. Cook until the gravy is thickened and the chicken cubes are tender. Check the seasoning and tenderness.
Remove pan from the heat, cover and give 10 minutes standing time. Delicious Chicken Korma is ready. Serve with Rice/Roti.
