Today I am sharing with you a nutritious recipe made with fenugreek leaves—It is Fenugreek Leaves Fry. It is a traditional Bengali recipe –tasty,healthy and very quick and easy to prepare and with few ingredients.It is a non spicy dish and you need only 1 tsp.of oil to prepare this healthy dish. It is a perfect dish for a diabetic patient. It goes well with steamed rice.
Cooking time – 15 minutes Serve – 4
Ingredients –
- Fenugreek leaves – 1 bunch(400 grams)
- Whole red chilly – 1 (broken)
- Nigella seeds (kalojeera) – 1/2 tsp.
- Garlic cloves – 3(finely chopped)
- Green chilly – 2 (chopped)
- Salt to taste
- Oil – 1 tsp.
- Sugar – a pinch(it is optional)
- Turmeric powder – a pinch.
Instructions –
Take fresh leaves with soft stems and wash well. Chop them finely, keep aside. Heat oil in a frying pan, add red chilly, fry till brown. Add kalo jeera, fry for few seconds. Reduce the heat.Add chopped garlic, fry for few seconds. Add the chopped shak, salt and turmeric powder. Mix well. Cover the and cook for 3 to 4 minutes (on slow flame). Stir in between. Now add 1/2 cup of water, green chilly and sugar(optional). Stir and cook till all the water evaporates(stir occasionally).
Delicious Diabetic Friendly Fenugreek Leaves Fry is ready, Serve as a first item for lunch with steamed rice.
