Today I am posting a delicious side dish recipe made with Turnip.In Bengal it is called Shalgam. It is a quick and easy to make recipe generally made in Winter season. Shalgom curry is very tasty to eat and goes well with Rice or Roti/Paratha.
Cooking time – 40 minutes. Serve – 4
Ingredients –
1.Turnip (Shalgom) – 500 grams.
2.Potato (large) – 1 (Peeled and cut into cubes)
3.Cumin seeds – 1/2 tsp.
4.Bay leaves – 2.
5.Tomato – 1 (chopped)
6.Onion (medium) – 1 (chopped)
7.Garlic paste – 1/2 tsp.
8.Ginger paste – 1/2 tsp.
9.Turmeric powder – 1/2 tsp.
10.Chilly powder – 1/2 tsp.
11.Cumin powder – 1/2 tsp.
12.Coriander powder – 1/2 tsp.
13.Salt to taste.
14.Sugar – 1/4 tsp.
15.Oil – 5 tsp.
16.Ghee – 1 tsp.
17.Garam masala powder – 1/2 tsp.
Method –
1.Take Turnips,peel the skins off and cut into cubes. By adding 1 tsp.of salt boil Turnip and potato cubes for 2 to 3 minutes and drain. Keep aside. Grind tomato and onion to a paste. To this add ginger-garlic paste,all the masala powders (turmeric,chilly,cumin,coriander) and 1/2 cup of water. Keep the masala mix aside.
2.Heat oil in a frying pan,add cumin seeds and bay leaves. When the cumin looks brown add the boiled Turnip and potato. Fry for 3 to 4 minutes. Add the masala mix,sugar and saute until the raw smell of the masala goes off. If needed add little water and saute for another few minutes. Add 2 cups of water and salt. Simmer for 5 to 7 minutes(until the vegetables are cooked)
When the gravy starts thickening remove pan from the heat, mix ghee and garam masala powder. Cover the pan and give 10 minutes standing time. Tasty Shalgam Curry is ready. Serve with Rice,Roti or Paratha..
