Coconut Pudding/Nariyel Kheer/Narkel Payesh

Hi friends,
My today’s recipe is Coconut Pudding – a popular Indian dessert made with coconut and milk.It is very tasty, quick and easy to prepare and unique dessert for a party.

Cooking time – 40 minutes.  Serve – 2
Ingredients –
1.Shredded coconut – 1 cup.
2.Ghee – 2 tbsp.
3.Milk – 1 liter.
4.Sugar – 1/2 cup.
5.Condense milk – 2 tbsp.
6.Cardamom powder – 1/4 tsp.
7.Cashew nuts – 5-6 (for garnishing)
Method –
1.Heat ghee in a non- stick frying pan. On slow flame stir fry the coconut for 3-4 minutes. Remove from heat,keep aside.
2.Boil milk in a heavy bottomed pan on medium heat, stir constantly to prevent it from burning at the bottom. Cook till three fourth the quantity is left. Add coconut,mix well and cook for 7-8 minutes with stirring occasionally. Add sugar, stir till sugar is dissolve. Add condense milk, mix well and cook until a creamy consistency is obtained.(stirring constantly)
3.Remove pan from heat, add cardamom powder and mix well. Cover the pan and give 10 minutes standing time. Allow to cool to room temp. Refrigerate until well chilled.
Coconut pudding is ready to serve,garnish with cashew nuts and serve as a dessert.
