Today I am sharing with you a delicious dessert recipe – Firni. It is very popular in North India. Traditionally Firni is made with ground rice, milk and sugar, flavored with saffron and cardamom. Today I am going to make Firni with a little twist. I am making it with caramelized sugar and flavored with lime leaves (Gandharaj Lebur Pata). You can use any kind of lime leaves. It is a refreshing dessert for the summer and very easy to prepare at home.
Cooking time – 45 minutes Serve – 4
Ingredients –
1.Rice (fine quality) – 100 grams.(soaked in water for 2 hours)
2.Milk – 11/2 liter.
3.Sugar – 1/2 cup.
4.Lime leaves – 4
5.Lime juice – 1 tsp.
Method – Caramelized sugar – Take sugar and 1/4 cup of water in a pan and place the pan over medium heat, stir continuously until the sugar begins to dissolve. Add lime juice and reduce the heat, simmer for few minutes. The mixture will turn from white to a light brown color to deep brown. Keep it aside.
In microwave – Place sugar and 1/4 cup of water in a micro safe bowl and microwave at high power for 2 to 4 minutes.
1.Remove the water from the rice and using 1/4 cup of milk grind the rice to a paste, keep aside.
2.Boil the milk in a non stick frying pan. Add the rice paste, mix well. Cook the mixture for 7 to 8 minutes. Stir continuously to prevent it from burning at the bottom. Add the caramelized sugar, mix well and simmer the milk till it thickens. When the milk thickens remove pan from heat. Add the lime leaves,cover the pan and let it cool. Discard lime leaves and pour the Firni in bowls and garnish with raisins on top. Cover the bowls with foils and keep in fridge. Serve chilled.
