Bengali khaja

Bijoya Dashami Misti–Khaja Recipe.

Shubho Bijoya to all of you. Today I am sharing with you a popular sweet- Khaja recipe. It is a traditional Indian recipe and perfect for Bijoya Dashami celebration. It is a deep fried sweet snacks made with plain flour (maida). The method is very simple and takes few minutes to prepare and with few ingredients. You can make it easily any time at home.

Bengali khaja

Cooking time – 45 minutes.  Serve – 5 to 6

Ingredients – (For the dough)

Flour – 500 grams.

Oil/ghee – 1/2 cup. And a pinch of salt.

Take flour and salt in a large bowl and mix well. Add oil /ghee and rub it with the flour for 3 to 4 minutes. Add cold water gradually and knead well to make a smooth but stiff dough.Cover the dough with a moist cloth for at least 30 minutes. Keep aside.

Ingredients – (for the sugar syrup)

Sugar – 2 cups.

Water – 1 cup.

Cardamom powder – 1/2 tsp.

Take sugar and water in a pan and place on medium heat. Stir till sugar is dissolves. Boil until the sugar syrup becomes sticky. Add cardamom powder, mix well and remove pan from the heat, keep side.

Ingredients – (For the fillings/Satta)

Oil /Ghee – 1/2 cup.

Flour – 3 to 4 tbsp.

Take oil/ghee in a small bowl. Add flour. Mix well to make a thick batter (like pakora batter). Keep aside.

Instructions –

Knead the dough again and divide into small balls (like chapati /roti balls). Using dry flour roll out each ball in a circular shape (as thin as possible). Cover them.

Take one chapati on the rolling board, Spread one tbsp.of flour batter fillings on it. Cover the fillings with other chapati. Spread 1 tbsp.of flour batter on the 2nd chapati. Cover the fillings with 3rd no.chapati. Spread 1 tbsp.of flour batter on the 3rd chapati. Now start rolling from one side (with three chapatis). When the roll is over dip your finger in water and seal the last end. Stretch the roll slightly. Cut the roll diagonally into 7 to 8 pieces.

Heat enough oil in a frying pan, when it is hot reduce the heat. Add 4 to 5 pieces and fry on slow flame until light brown on both sides. Increase the heat and take out the fried khajas with a slotted spoon and keep on paper towels. Again reduce the heat and repeat the same process.

Warm the sugar syrup, drop the fried khajas in the syrup and stir gently. Take out quickly from the syrup and spread in a greased dish. Allow to cool at room temp.

Delicious fried sweet Khaja is ready to serve. Hope you will like the recipe.
