Today I am posting delicious Aar macher kalia recipe.Fish kalia is one of the spicy and rich preparation of fish and incredibly delicious. I have made this dish with medium spicy. It is a traditional Bengali recipe and perfect for any occasion. The method is very simple, you can make it any time at your home. But remember fry this type of fish (Aar,Boal,Tengra etc.)with a lid. Because the fish skin can be burst. It is better to fry 1 or 2 fish pieces at a time with a lid.

Aar macher kalia

Cooking time – 45 minutes.   Serve – 4

Ingredients –

  1. Aar fish – 4 pieces.
  2. Onion (large) –1 (finely chopped)
  3. Grated ginger – 1/2 tsp.
  4. Garlic cloves – 4
  5. Tomato – 1 (chopped)
  6. Turmeric powder – 1/2 tsp.
  7. Red chilly powder – 1/2 tsp.
  8. Cumin powder – 1/2 tsp.
  9. Garam masala powder – 1/2 tsp.
  10. Salt to taste
  11. Sugar – 1/4 tsp.
  12. Bay leaf – 1
  13. Oil – 1/2 cup.
  14. Ghee – 1/4 tsp.
  15. Raisins – 2 tbsp.
  16. Slit green chilly – 4
  17. Cumin seeds – 1/2 tsp.

Instructions –

Wash the fish pieces with lukewarm water, marinate with 1/4 tsp.of salt and a pinch of turmeric powder, keep aside until use. Grind tomato,ginger and garlic into a paste. Cover and keep aside.

Heat oil in a frying, when it is hot reduce the heat. Add the fish pieces, cover the pan and fry in slow flame till light brown on both sides. Take out the fried fish from the oil, keep aside. Increase the heat. Add cumin seeds and bay leaf in the remaining oil, fry for 3 to 4 seconds. Add chopped onion, fry till light brown. Add tomato- ginger-garlic paste, saute for 1 minute. Add turmeric-chilly-cumin powders, sugar and 1/2 cup of water, mix well. Saute till all the raw smell of the masala goes off. If needed add little water and saute for extra few minutes (stir continuously). Add 3 cups of water, increase the heat and allow it to boil for 2 minutes. Add the fried fish pieces,salt, green chilly and raisins. Cover the pan and reduce the heat. When the gravy starts thickening, remove pan from the heat. Gently mix ghee and garam masala powder, cover the pan and give few minutes standing time. Delicious Aar Macher Kalia is ready. Serve with hot plain rice or jeera rice/pulao.
