My today’s recipe is moong dal khichri – a traditional version of khichuri which is a mixture of rice (gobindobhog ) and golden grams ( sona moong ). It is often made during puja. It is very simple, pure and divine. You can use any kind of fine rice (Atop chal) and dal(without massor dal) instead of gobindobhog rice and sona moong dal.
Cooking time – 1 hour. ( 30 minutes in pressure cooker.) Serve – 4
Ingredients –
1.Rice – 500 grams.
2.Moong dal –( 500+100) grams.
3.Dry red chilly – 3
4.Cumin seeds – 1 tbsp.
5.Bay leaves – 2
6.Ginger paste – 1 tbsp.
7.Turmeric powder – 1 tbsp.
8.Red chilly powder – 1/2 tbsp.
9.Cumin powder – 1/2 tbsp.
10.Green chilly (slit) – 4.
11.Sugar – 1 tbsp.
12.Salt to taste.
13.Oil – 4 tbsp.
14.Ghee – 2 tbsp.
15.Garam masala powder – 1 tbsp.
In a frying pan, on low heat dry roast the moong dal till light brown with stirring constantly. Wash and soak in normal water for 30 minutes. Drain and keep aside.
In another bowl take rice, wash and soak in water for 30 minutes. Drain and keep aside.
Cooking method – 1.In a small bowl take ginger,red chilly-turmeric-cumin powders and 1 cup of water, mix well. Keep the masala mix aside.
2.Heat oil in a frying pan, when it is hot reduce heat. Add dry chilly and cumin seeds. When it splutters add bay leaves, stir for a few seconds. Add the masala mix slowly. Saute on medium flame until the raw smells of the masalas goes off.
3.Add the soaked moong dal and 1 cup of water, saute for 5 minutes with stirring constantly.
4. Add the soaked rice and 1 cup of water, mix well and saute for 4-5 minutes.
5.Add salt, sugar and 2 liters of warm water,mix well, cover the pan and let it bring to boil.(stirring occasionally).Cook until the rice and dal are cooked.If needed add warm water.
6.Remove pan from heat, add ghee, garam masala powder and green chilly and mix well. Cover the pan and give 30 minutes standing time.
Moong dal khichri is ready to serve. Serve with cauliflower curry/potato curry /fried vegetables(bhaji).
