My today’s recipe is Potato With Fenugreek Leaves Curry. It is a healthy dish. It is very simple and quick and easy to make and requires a few ingredients.
Cooking time – 30 minutes. Serve – 4
Ingredients –
1.Fenugreek leaves (fresh) – 2 cups (washed and chopped)
2.Potato(large) – 1 (cut into small cubes)
3.Nigella seeds(kalonji) – 1/2 tsp.
4.Salt to test.
5.Oil – 2 tbsp.
6.Slit green chilly – 2
Method –
1.Soak the potato cubes in water for 10 minutes, drain. Wash the fenugreek leaves and keep in a colander.
2.Heat oil in a frying pan, add green chilly and nigella seeds, stir fry for few seconds. Add potato cubes, and salt. On slow flame stir fry till light brown. Add the fenugreek leaves, mix well and cover the pan. Cook for 5-7 minutes on slow flame(stir in between)
Remove pan from heat. stir again and cover the pan. Give 10 minutes standing time.
Potato With Fenugreek Leaves Curry is ready. Serve the healthy dish as a first item for lunch
