Today I am posting a traditional Bengali sweet Jibe Goja recipe. It is a deep fried snacks,made with flour and coated with sugar syrup. Jibe Goja is very popular in West Bengal and Bangladesh,it is delicious and very quick and easy to prepare and with few ingredients. You can make the delicious sweet easily at home and can be stored for few days.
Cooking time – 45 minutes. Serve – 4
Ingredients –
- Flour (maida) – 2 cups.
- White oil/Ghee – 1/2 cup.(FOR THE DOUGH)
- Salt – a pinch.
- Baking soda – a pinch.
- Sugar – 2 cups.
- Water – 1 cup.
- Enough oil/ghee for deep frying.
Instructions –
Boil sugar and water in a pan,stir till sugar is dissolved. Keep cooking till a thick syrup(one thread consistency) is found. Remove pan from the heat, cover and keep aside.
In a large bowl add flour,salt,baking soda and mix well. Now add 1/2 cup of oil/ghee. Rub the flour with oil for 5 minutes. Add little water and knead well to make a nice hard dough. Cover the dough with a wet cloth, allow to rest for 30 minutes.
After 30 minutes knead the dough again. Divide the dough into small balls. Take one ball on a rolling board and roll out into oval (1/4 inch thick).[actually give the ball a tongue shape]. With a knife make 4 to 5 cuts(horizontally) on it (keep the edges intact). Place the rolled ball in a greased tray. Repeat the same process with rest of the balls.
Heat oil in a frying pan,when it is hot reduce the heat. Fry the Gojas on slow flame until light brown on both sides. Fry 3 to 4 Gojas at a time. Warm the sugar syrup. Drop the fried Gogas into the syrup and take out immediately from the syrup.Spread them in a tray. Allow it to cool at room temp.
Delicious Bengali sweets – Jibe Goja is ready to eat. You can store the sweets in refrigerator for long days (in a sealed pack).
