Today I am posting a popular street food Petai Parota recipe. It is a special type of paratha made with plain flour. It is very soft and light but at the same time crispy and flaky. Different methods are applied in preparing this paratha. Here is a simple way of preparing petai parota at home.
Cooking time – 30 minutes. Serve – 4
Ingredients –
- Plain flour (maida) – 2 cups.
- Salt – 1/4 tsp.
- Veg. oil – 5 tbsp.
- Baking powder – 1 tsp.(optional)
- Boiling water
Instructions –
Combine flour,salt and baking powder in a large mixing bowl. Add boiling water gradually and mix well with a spatula. After 5 to 6 minutes knead the flour with hand and make a soft dough. Add 1 tbsp.of oil, knead again. Cover the dough, allow to rest for 10 minutes.
Divide the dough into 4 balls. Take one ball, with the help of little oil roll it out. Brush oil on the top of the roti . Make pleats and roll into a round ball. Repeat the same process with the other three balls. Cover the balls, allow to rest for 10 minutes.
After 10 minutes roll the balls into round rotis. Heat a griddle, brush oil on it, place one roti. Cook for 30 seconds. Flip it and cook for 30 seconds. Brush oil on both sides and cook on both sides. When you see the light brown color on both sides, take out from the griddle. Now break the roti with hands (or rolling pin/spatula) to enhance its flakiness. [Try not to cook it for long time, the bread will be hard].
