Today I am sharing a new recipe of Mango Pickle. It is an instant recipe —-takes few minutes to prepare and with few ingredients. Traditionally sweet mango pickle making requires 2 to 3 days of time and need lots of sugar/jaggery and masalas. But todays recipe is instant recipe with less sugar and less masalas. You can enjoy it any time or with dal-rice/roti/parathas.
Cooking time – 30 minutes. Serve – 4/5
Ingredients –
1Raw mango —-500 grams (peeled and shredded)
2.Sugar – 3/4 cup.
3.Ginger (grated) – 2 tsps
4.Turmeric powder – 1/4 tsp.
5.Chilly powder – 1/2 tsp.
6.Chilly flakes – 1 tbsp.
7.Raisins – 25 grams.
8.Salt to taste.
9.Lemon juice – 2 tbsp.
Instructions –
Mix grated mangoes with 2 tbsp of salt and leave aside for 7 to 8 hours (or over night). The mangoes will release water. Transfer them to a strainer to remove all the water. Soak raisins in water for 10 minutes and drain. Now combine mango, sugar, ginger, turmeric-chilly powders in a pan. Place the pan on slow heat and cook for 7 to 8 minutes with stirring continuously. Add Raisins, chilly flakes and lemon juice. Stir till one string consistency.
Remove pan from the heat, allow to cool completely.
Delicious Sweet Mango Pickles is ready. You can serve it immediately or store in an air tight glass jar.
