Today I am making a traditional Indian sweet – Malpua but with a little twist. I am making shallow fried malpua with melted chocolate. It is very easy to cook and tasty to eat.
Cooking time – 40 minutes. Serve – 4.
Ingredients –
1.Flour – 1/2 cup.
2.Semolina (Suji) – 1/2 cup.
3.Milk – 1 cup.
4.Chocolate – 100 grams.
5.Black cardamom – 1.
6.Sugar – 1 cup.
7.Water – 1/2 cup.
8.Ghee/melted butter for shallow frying
9.Grated chocolate for garnishing.
Method –1. Melt the chocolate in microwave or double boiler [see chocolate ice cream sondesh (30.10.2013)]. Crush cardamom seeds.
2.In a bowl mix flour,semolina,melted chocolate and cardamom. Add milk to make a batter.Beat well so that there is no lumps inside the batter. The batter should be a smooth pouring consistency (like pan cake batter). If needed add little milk. Allow it to rest for 10 – 15 minutes.
3.Take sugar and water in a pan and boil. Simmer to obtain one thread consistency or simmer until it reduces to half its quantity.
4.Heat a non- stick frying pan.When hot reduce the heat,brush little ghee/butter on the surface of the pan. Pour 2 tbsp. of batter and spread it in a circular shape. Cook until the batter is dry.Add 1 tbsp. of ghee over it and turn over. When both sides are done drop into the sugar syrup.Keep in the syrup for 2-3 minutes.
Shift the malpua in a plate. Garnish with grated chocolate and serve as a dessert.
