Today I am sharing with you a simple but tasty recipe made with Bitter Gourd leaves. The leaves are nutritious and rich in minerals and vitamins. To this recipe I have used sweet potato (for diabetic patient) but you can use any types of potatoes. You need few ingredients and little time for making this healthy dish. It can be served as a first item for lunch.
Cooking time-15 minutes. Serve -4/5
Ingredients –
1.Bitter gourd leaves (with tender stems)—1 bowl
2.Potato (large) – 1 (peeled and cut into small cubes)
3.Kalonji/Kalojeera — 1/2 tsp.
4.Tumeric powder – 1/4 tsp.
5, Salt to taste.
6.Oil -2 tbsp.
Instructions –
Chop the leaves and stems, wash and keep aside. Heat oil in a frying pan, add kalonji and fry for 30 seconds. Add potato cubes, salt and turmeric powder. Cover the pan and fry on slow flame for 3 minutes. Now add the chopped leaves, mix well. Cover the pan and saute for 3 to 4 minutes (stir in between). Add little water and cook for few minutes till the water evaporates. Take out the pan from heat, cover and give 5 minutes standing time. The dish is ready to serve. Hope you will like the recipe.
